A much loved curry.... made simple!
This recipe uses our tandoori masala seasoning to make an authentic tasting South Indian favourite, with simple ingredients and an easy to follow recipe.

Ingredients
600g chicken breast - diced
20g tandoori masala
1tbsp chilli powder
75g plain yoghurt
2 medium onion - thinly sliced
8 cloves garlic - thinly sliced
2tbsp tomato puree
400ml chopped tomatoes
1tsp red colouring powder
Method
In a large bowl, add the chicken, yoghurt, masala powder and half of the garlic, mix until fully coated.
Heat oil or ghee in a large pan and add the onion, cook on a low heat until softened - this should not brown or crisp up.
Add the remaining garlic and chilli powder, cook for 1-2 minutes or until fragrant.
Add the chopped tomatoes, puree and colouring, mix well and cook for 5 minutes until thick.
Add the chicken along with the marinade (add extra tandoori masala here if needed), add 150ml water or chicken stock and cook for 20 minutes, or until the chicken is cooked through.
Serve up alongside basmati rice, naan bread and top with fresh coriander and sliced fresh chillies.
Top tips:
Always marinate your meat for a curry if you have time - this allows the flavours to penetrate the meat before cooking - resulting in a better punch of flavour.
Most curries start on a base of garlic and/or ginger - always have these staples to hand!
Curries are completely customisable in terms of flavour, texture and ingredients - add extra veggies, change up the meat, add more or less water, extra spices, add yoghurt or cream... its up to you!
