A tasty one pan rice dish inspired by America's deep south, packed with veg & our delicious tex mex seasoning.
Pair alongside tacos, seafood and more.
200g uncooked white rice
1 green pepper - diced
1 onion - diced
400ml broth (chicken or vegetable)
200g can sweetcorn - drained
400g can black beans - drained
Heat oil or alternative in a large pan, add the pepper and onion and cook for 3 minutes, add the seasoning, along with salt & pepper and stir well.
Add the rice and broth, and bring to the boil, simmer for around 15 minutes or until rice is tender.
Add the beans and corn, stir well, cover and cook for another 10 minutes or until cooked through.
