Ingredients
3kg beef brisket
300ml beef stock
10g Natural Hickory Smoke Powder (optional)
500ml BBQ sauce (Meat Lust or Mississippi work great)
Method (oven & BBQ)
Preheat the oven to 150C (130C Fan) and generously coat the brisket with the BBQ rub, smoke powder and a pinch of salt, set aside to marinate.
In a large roasting tin, mix the beef stock & 250ml BBQ sauce, add the brisket to the tin and cook for around 3-4 hours, until the meat is tender, remove form oven and set aside (this can be done well in advance)
Heat the BBQ until its giving a medium heat (the meat will burn if it is too hot), remove the meat from the tin and place on the grill, cook for around 20 minutes until the meat is charred.
Slice and serve with the remaining BBQ sauce.
