A simple recipe, delivering fiery results!
We use chicken thighs & drumsticks in this recipe but you can use any cut of chicken or other meat you fancy.
Please use these chillies with caution... and don't be tempted to add more than recommended.
Ingredients
500g chicken thighs & drumsticks
1 onion - finely sliced
1tbsp fresh garlic - finely minced
1tbsp fresh ginger - finely minced
1-2tsp carolina reaper chilli flakes (choose wisely)
2tbsp Kashmiri curry powder
2tbsp tomato puree
400g chopped tomatoes - tinned or fresh
200ml chicken stock
2tbsp lime juice
Fresh chopped coriander
Method
Heat oil in a large pan or wok, add the chicken and sear until browned all over - set aside.
Reduce the heat and add the onion, begin to cook until softened - try not to let these brown too much.
Add the ginger & garlic and cook for a further 2-3 minutes until fragrant, add the curry powder and chilli, stirring until 'cooked' - this takes away the bitterness of the raw spices.
Add the tomato puree and mix well, a paste like consistency should be formed and the spices should be fragrant.
Add the chopped tomatoes and stock, mix well until combined before adding the browned chicken to the pan.
Cover and simmer for 25-30 minutes or until the sauce has reduced and the chicken is cooked through.
Garnish with fresh lime juice and chopped coriander.
Serve alongside rice and bread.
