This recipe makes 4 burgers but you can make it your own by adding extra!

Ingredients

  • 4 turkey breast fillets - these are readily available at this time of year!

  • 250g southern fried mix

  • 8 rashers smoked bacon

  • 1 wedge brie - sliced

  • 4tsp cranberry sauce

  • 4tsp mayonnaise

  • 1tsp garlic powder

  • 2tsp onion powder

  • 2tsp dried sage

  • handul rocket leaves

  • 4 x brioche seeded burger buns

Method

  1. Add the southern fried mix to a large bowl along with 1tsp onion powder and 1tsp sage, take the turkey fillets and dip in to the flour mix, ensuring well coated, there is no need to dip this in egg beforehand, the flour should stick by itself.

  2. Cook the bacon as preferred until crisp, toast the burger buns lightly and set aside.

  3. In a bowl, add the mayonnaise and remaining spices, along with salt & pepper, mix well.

  4. Heat oil in a deep pan and add the fillets, one at a time until cooked through and crisp, set aside.

  5. Spread the seasoned mayo on one side of the bun and add a handful of rocket leaves, add the turkey fillet, top with bacon, brie and a dollop of cranberry sauce.

  6. (optional) Wrap the burgers individually in foil and place in the oven or the airfryer for 5-6 minutes, this heats the burger through and melts the cheese.
