  • 75g feta - diced

  • 60g grated parmesan

  • 1 egg - beaten

  • 1tbsp cous cous seasoning

  • 1tbsp minced garlic

  • 1tbsp lemon juice

  • 6 sheets filo pastry

  1. Heat oil in a pan, add the spring onions, and garlic, cook for 2-3 minutes until soft, add the spinach and cook until wilted.

  2. In a large bowl, combine the cottage cheese, feta, lemon juice, parmesan and beaten egg, mix well till combined and add the cous cous seasoning, add salt & black pepper to taste.

  3. Drain the excess water from the spinach mixture and add to the bowl, mix well until fully combined.

  4. Lay a filo sheet flat and brush with oil/melted butter/alternative, and cut into 6 strips, place 1tbsp of the cheese mixture on the dough & fold to make a triangle shape, wrap following the strip of pastry and sealing at the bottom with butter/oil.

  5. Brush the finished triangles with melted butter and place on a baking tray.

  6. Cook for 10-12 minutes or until golden.

We bake these in the oven - but you could cook them in the airfryer!
