Honey & Mustard Seasonal Vegetables

Crispy seasonal carrots & parsnips, coated in a seasoned honey glaze.

The ideal accompaniment to your christmas dinner.

Try adding different herbs or spices to this to make it your own.

Or, add chilli flakes for a hot honey style kick!


  • 500g parsnips - peeled & sliced

  • 500g carrots - peeled & sliced

  • 1tbsp honey

  • 1tbsp dijon mustard

  • 1tbsp balsamic vinegar

  • 3tbsp olive oil

  • 1tsp dried thyme

  • 1tsp dried rosemary

  • 1tsp pink peppercorns


  1. Preheat the oven to 220C / 200C Fan and line a baking tray with paper.

  2. In a large bowl, combine all other ingredients and mix well.

  3. Add the carrots and parsnips and toss until well coated.

  4. Spread out evenly on the baking tray and place in the oven, roast for around 30 minutes, turning halfway.
