Recipe

Ingredients:

  • 800g minced pork

  • 100g Old Dubliner sausage mix

  • Natural or Collagen sausage casings

  • 600g floury potatoes - peeled & chopped

  • 1 large onion - finely sliced

  • 1tsp mustard

  • 1tsp garlic - minced

Method:

  1. In a large bowl, add the mince, sausage mix and 100ml cold water, mix well till combined.

  2. Fill into casings using a sausage stuffer, linking as you go along - try using a little vegetable oil on your hands to allow this to go smoothly.

  3. Heat oil or alternative in a pan and add the sliced onion, mustard and garlic, cook on a low heat for around 15-20 minutes or until caramelised.

  4. Cook the sausages as preferred, we recommend grilling, pan frying or popping them in the air fryer for around 8-10 minutes.

  5. Add the potatoes to a large pan of salted water, bring to the boil and cook for around 20 minutes or until soft.

  6. Mash the cooked potatoes and add the onion mixture, along with a splash of milk, mix well till combined.

  7. Plate up the mash, sausages and top with gravy of your choice.
