Scottish Venison Sausages

A delicious take on the traditional sausage, using our venison sausage seasoning - packed with warm, subtle herbs & spices, ideal for adding a burst of flavour to your game!



Venison is usually readily available from local butchers, we use venison mince in this recipe, but you could use beef for a similar taste.


We also use in this recipe, our 28mm collagen casings & sausage stuffer.

If you don't fancy making link sausages, try shaping the meat into patty shapes - perfect for serving up on bagels or muffins.

Method

  1. Add the minced meat, sausage mix and 100ml water to a large bowl, mix well till combined & smooth and set aside - this allows the seasoning to infuse the meat.

  2. Heat oil or butter in a pan and add the onion, cook low and slow until caramelised.

  3. Once cooled, add the caramelised onion into the mince, mix till fully combined.

  4. Fill the sausage meat into casings using a sausage stuffer, or shape into patties.

  5. Cook as preferred - grill, pan, oven or airfryer!
