Recipe
Ingredients:
1kg beef brisket ( or diced beef)
1 red onion
2tbsp minced garlic
1L quality beef stock
1tbsp tomato puree
6 cherry tomatoes (whole)
1tbsp cumin
1tbsp oregano
1tbsp smoked paprika
1/2tsp ginger
1tsp ground coriander
1tsp cayenne pepper
Grated cheese - mozzarella or cheddar works great!

Method:
Add the meat, onions & tomatoes into the slow cooker - in a separate bowl or container, mix the seasonings and set aside. (no need to soak or prep the chillies - they will rehydrate during cooking)
Add in the seasonings, chillies and bay leaves, pour over the beef stock, cover and cook on high for 4-5 hours or low for 6-8 hours.
When the meat is cooked and tender, remove the meat from the liquid using a sieve or a strainer and set aside, remove the bay leaves and cinnamon stick, and blend the remaining liquid into a smooth sauce, add more water if its too thick.
In a large bowl, shred the meat using two forks, add a little sauce back into the mixture and mix well.
Heat a pan and dip a tortilla into the sauce mixture until covered, place it in the hot pan and fry until browned on one side, flip and repeat on the other side.
On one half of the tortilla, add a sprinkle of cheese, and top with the meat mixture.
Fold the tortilla in half and flip until cooked and crispy on both sides.
Serve up alongside the remaining sauce to dip, and accompany with some guacamole or salsa!
