Rich garlic & harissa spiced chicken with potatoes - a hearty one pan dish.
This versatile dish can be used with any cut of meat or vegetable, or change up the flavours by adding different spices.
So simple to make & guaranteed to impress - prepare in advance & just chuck in the oven for an hour.
4 chicken legs
400g cherry tomatoes
350g new potatoes
50g olives - sliced
5-6 garlic cloves
1 lemon - sliced
Heat the oven to 190C / 170C Fan / Gas 5.
In a large bowl, score the chicken legs, drizzle some olive oil and add half of the harissa powder, mix well until fully coated.
In a roasting tray, add the vegetables and garlic, drizzle with olive oil and sprinkle the remaining harissa, mix well, place the chicken on top and add the lemon and olives.
Cook for approximately 45 minutes - 1hr until the chicken is cooked through.
