This delicious condiment is SO versatile, it can be used during cooking, to top dishes & more!
Use in eggs, avocado, noodle dishes, curries, stews... the list goes on!
Recipe
700ml neutral oil (vegetable/peanut) - add a splash of sesame oil if you wish!
4-5 Chaotian chillies - finely chopped
25g garlic flakes (chopped)
25g kibbled onions
1tsp black peppercorns (or rainbow!)
0.5tsp MSG
1tsp brown sugar
Add the oil to a pan with the chaotian chillies, garlic, onion, peppercorns, star anise & cinnamon stick.
Heat the oil gently and simmer for around 20 minutes until the peppers, garlic & onion are brown and crispy.
Remove from the heat and allow to cool slightly, in a heatproof jar or container, add the chilli flakes, msg, sugar & 1tsp soy sauce, mix well.
Strain the hot oil into the jar, remove the star anise & cinnamon stick from the strainer and add the remaining chillies, garlic, onion etc into the jar of oil.
Mix well and stir before using.
Top tips:
Use different chillies to boost or reduce the heat to your taste.
Add different aromatics or ingredients such as coriander seeds, bay leaves etc - this is completely customisable!
Fresh garlic & onion can be used, as well as spring onions, peppers etc.
Use the oil from, the crisp to cook eggs, chicken or beef & top the dish using the crisp.
This is ideal for topping Thai dishes and ramen dishes.
Other ingredients to try adding:
Chipotle flakes - this will give a more smoky heat.
Kibbled Ginger Flakes - add a sharp ginger flavour.
Red Bell Pepper Flakes - Ideal for creating a milder crisp by replacing chillies.
Whole cloves - adds an oriental aromatic flavour.
