A delicious fusion of southern Cajun chicken and creamy pasta - packed with veg and lower in calories & slimming values - perfect for everyone!
Recipe (serves 4)
500g chicken breast - sliced
250g penne pasta (or any shape of your choice)
1 red onion - sliced
1 red bell pepper - sliced
1 green bell pepper - sliced
50g Cajun seasoning
2tbsp minced garlic
1tbsp tomato puree
200g lighter cream cheese
60g lighter cheese (mozzarella or cheddar work great)
Add the chicken to a bowl with the cajun seasoning and mix well until covered, set aside to marinate.
Cook pasta according to packet instructions, drain & set aside (keep approx 1 cup of pasta water - we will use this later)
Heat oil or alternative in a large pan, add the chicken & cook on a high heat until seared all round.
Lower the heat and add the garlic & onions, cook for around 2-3 minutes then add the peppers, cook for a further 2-3 minutes.
Add the tomato puree, cream cheese and pasta water to the pan and mix well until combined, allow to simmer for 1-2 minutes before adding the pasta.
Stir until smooth & well combined, add the cheese & mix until melted through.
