Scotch Eggs

The perfect lunch, snack or picnic treat!

So simple to make and great as part of a healthy, balanced diet.

This makes 10 large scotch eggs.


We use pork mince in this recipe, but you could use chicken, turkey or even beef!


Why not try experimenting with different sausage mix flavours too? Chorizo, curry or hot & spicy!



Ingredients

10 large eggs - whole

2 large eggs - beaten

800g pork mince

150g breadcrumbs

Plain flour


Method

  1. Add 10 eggs to a large pan of cold water and bring to the boil, cook for 4 minutes and transfer to a bowl of cold water and allow to cool - peel once cooled.

  2. In a large bowl, add the minced meat, sausage mix and 100ml cold water, mix thoroughly until combined and set aside.

  3. In 3 separate bowls, add the beaten egg, flour and breadcrumbs.

  4. Take an egg, roll in flour and gently fold mincemeat around the egg, coating entirely, dip in flour, then egg, then roll in breadcrumbs.

  5. Repeat this process until all eggs are coated.

  6. Deep fry for around 4 minutes or until golden, you can also airfry, or ovenbake these.
